Here's a fetish project that's been in the skunkworks for over a year. Take a straightforward double butted steel frame with road (not track) geometry and mate it with a drilled fork with a bit of extra clearance, some Schwalbe CX Pro tires, and bingo: instant fixed cross bike.
Granted, there are some limitations. In the scenario shown, there would be either no brakes at all, or a front Paul Components Racer. But it could just as easily be built up with a front fork with canti studs... And it's true: as much as I love the feel and performance of the CX Pro, 5mm of mud clearance is less than optimal in some situations.
However, the upsides are pretty obvious. Mechanically, it's solid and simple and low maintenance. Functionally, it's perfectly appropriate for Chicago Cross, and with careful gearing, totally acceptable for any of the Chicago Cup races. It's light weight and beautiful. And best of all, it's incredibly affordable!
